In my opinion, you can never have too much chocolate. These cookies live up to that statement. They are full of chocolate, chewy delight! I recently baked them for a football party and failed to mention that they were Paleo and didn't contain any sugar, butter or flour. I waited until everyone had tried one. After compliments from multiple people about how delicious they were and how they wanted to eat the whole plate, I informed everyone of what they consisted of. Needless to say, I got multiple responses that they wish they knew because they would have gone for seconds! These are sure to be a crowd pleaser and a healthier option to traditional chocolate cookies.

Ingredients:
1 C sunflower seed butter
1 C coconut sugar
1 egg, beaten
1/2 C unsweetened cocoa powder
1 tsp baking soda
1 tsp vanilla extract
1 tsp ground espresso powder
1/2 C non-dairy chocolate chips
pinch of salt
Directions:
Preheat oven to 350 degrees F.
In a large bowl, mix sunflower seed butter, egg, vanilla and coconut sugar.
In a separate small bowl, sift cocoa powder and add baking soda and pinch of salt.
Add cocoa mixture to sunflower seed butter mixture and mix until well combined.
Add chocolate chips and mix until incorporated
Scoop about 2 T of dough and shape into ball with hands.
Place onto cookie sheet and flatten slightly
Bake for 10 minutes
Remove from oven and let sit 5-10 minutes and move to cooling rack
