Pitaya smoothie bowl

There's nothing better than enjoying a delicious, healthy smoothie bowl during hot summer days. This bowl is packed with nutrients and and so much flavor! The best part is that it's so easy to make! When I was living at the beach, I tried quite a few places' acai or pitaya bowls, and couldn't seem to find a favorite, so I went ahead and started making my own. When you make your own, you have total control over portion size, ingredients and texture! I've since found a place near my house that has amazing acai bowls, but they're just so expensive! Making them at home saves money and gives you the ability to customize them just how you want! I'm sure you'll be seeing more bowls from me :)

Ingredients:

Smoothie bowl:

1 packet pitaya smoothie blend (I bought Sambazon)

1 banana

1 tsp cinnamon

1 cup spinach

1 cup frozen (or fresh) strawberries

5-6 ice cubes

1/4 cup cashew (or other nut/dairy alternative) milk*

Toppings:

1/4 banana, thinky sliced

2-3 strawberries, thinly sliced

2 squares dark cocoa, finely chopped

Directions:

1. Blend all smoothie bowl ingredients together in a high speed blender. *If you like your smoothie bowls more icy in texture, add less milk, and if you like them creamier and more liquidy, then add more milk

2. Top with banana, strawberry and chocolate. You could add shredded coconut, bee pollen, etc. Get creative :)
