One Pan Chicken Sausage Skillet

This is another super simple dish that's great for food prep. You can change up the dish by changing the vegetables so that you don't get bored of the dish. The dish is full of flavor with very little effort. It makes a great dish for lunch at the office or a quick dinner you can reheat in a pan during the week for fresh taste.

Ingredients:

1/2 pound mushrooms, cleaned and chopped

1 large head broccoli, cut into bite-size florets

1 zucchini, chopped

1 yellow squash, chopped

2 cloves garlic, minced

1 small yellow onion, minced

1 bell pepper, chopped

4 chicken sausage links (I used spicy Italian chicken)

1 tsp Trader Joe's everyday seasoning

1/2 tsp cumin

1/4 tsp red pepper flakes

Directions:

- Preheat oven to 350 degrees

- Clean all veggies and chop into bite size pieces

- Mince onion and garlic

- Heat 1 tablespoon oil in large skillet

- Bake chicken sausage for 20-25 minutes

- Place onion & garlic in pan and cook for 30 seconds

- Add remaining veggies and cook for 10 - 12 minutes

- When chicken sausage is done, remove from oven and carefully cut into 1'' pieces

- Add sausage to veggies and cook for 5 more minutes.
