Strawberry lemonade

I needed a thank you gift for someone and wanted something that would show my true appreciate. My best way of showing that? Making something homemade of course! I knew that they liked vodka, so I decided to get a large handle at Costco and pair it with this refreshing, paleo, homemade strawberry lemonade. It was super simple to throw together but it was actually my first time making homemade lemonade! I have a juicer, so it made things super easy. If you don't have a juicer, you can definitely still make this recipe, it just might take a bit longer. I juiced my strawberries, but you could simply blend yours in a blender or food processor with a bit of water. You'll just need to strain the end result if you don't want lumpy strawberry lemonade. Also, since I used a juicer, I only needed 4 lemons because I stuck the whole thing in the juicer. However, if you're using your hands or one of those small lemon juicers, you'll probably need about 7-8 lemons depending on their size and juiciness.

I was debating for a long while whether I wanted to make strawberry or cherry lemonade. I think I might have to try a cherry version next while cherries are still in season. This recipe can definitely be altered and you can use different fruit. If you do, I'd love to hear how it turns out!


4 large lemons (yield 1 1/4 cup lemon juice)

7 cups filtered water

1/2 cup honey

1 pint strawberries (yield 1/3 - 1/2 cup juice)

Juicer Directions:

1. Juice the four lemons in juicer (leave rind on, just rinse really well)

2. Pour juice into saucepan

3. Clean out juicer and juice the strawberries

4. Pour strawberry juice into large pitcher

5. Add 1 cup water to the saucepan

6. Add honey to the saucepan

7. Heat saucepan and whisk mixture until honey is dissolved (no need to bring to a boil)

8. Cool liquid and add to pitcher

9. Add remaining 6 cups water and stir well

Non-juicer Directions:

1. Juice 6-7 lemons by hand (until you get 1 1/4 cups lemon juice and add to medium saucepan

2. Add 1 cup water and 1/2 cup honey to the saucepan

3. Head saucepan and whisk mixture until honey is dissolved (no need to bring to a boil)

4. Turn off heat and let mixture cool to room temperature

5. In a blender or food processor, process 1 pint strawberries with about 2 tablespoons of water (add more water if needed to make nice, liquidy mixture). If you're using a high powered blender like a Vitamix, start with no water and slowly add in 1 tablespoon at a time

6. Add strawberry juice, lemon/honey mixture and remaining 6 cups water to a large pitcher.

7. Strain mixture through fine mesh strainer into a large bowl or second pitcher.

8. Mix well

Serve over ice and enjoy!
