Paleo Chocolate Chip Skillet Cookie

So I thought about making the title Paleo Chocolate Chip Skillookie. Since you, know.. pizookie is already taken. Plus, this one is made in a skillet and it doesn't remind me at all of a pizza. The name sounded kinda weird so I stuck with skillet cookie. But feel free to call it a skillookie. Who knows, maybe it'll catch on. Orrr people will think you're a weirdo. Either way it's kinda fun, right?

This cookie is so ooey gooey and delicious. You want to make sure not to completely cook it through so that it's still melty. But if you do so, it doesn't save too well. Not like there will be any leftovers anyways because you'll want to devour it. It does make a really large serving, so definitely have a couple people to share it with. Or don't, I won't judge. I made this for three people and we couldn't finish it, but we had eaten a large dinner. That was a mistake. Should always save more room for dessert! I served it up with some banana nice cream. I simply blended 3 frozen bananas, 1 tablespoon almond butter, a teaspoon of vanilla extract and a dash of cinnamon in a food processor. Just look at the melty deliciousness! You can serve it with your favorite ice cream or just eat it on its own, you really can't go wrong.

I used an 8'' cast iron skillet* because that's the smallest size I have. If you use a 5'', you can cut down the recipe and use about 3/4 of all ingredients (1 egg should still be fine).

*If you don't have a cast iron skillet, a regular skillet should work. Make sure to oil it well.


1/3 cup coconut oil, soft but not liquid

1/2 cup coconut sugar

1 egg, room temperature

1 1/2 tsp vanilla extract

1 1/2 cups blanched almond flour (the finer the better; I used Oh Nuts! brand)

1/2 tsp baking soda

1/4 tsp sea salt

1/3 cup chocolate chips or chunks (Enjoy Life is one I tend to use)


1. Preheat the oven to 350° F

2. Beat coconut oil and sugar until smooth and fluffy

3. Add egg and vanilla and mix until combined

4. Add almond flour, baking soda and salt and mix until incorporated

5. Fold in chocolate chips

6. Make sure to grease the skillet - I used coconut oil spray (with no added ingredients like propellant). You can also just oil it with some coconut oil

7. Press the cookie dough flat into the skillet and make sure the surface is even

8. Bake for 15-18 minutes, or until edges are brown, but center is still a bit gooey

Optional: serve with your favorite ice cream
